What I really like about this book is the nutritional information. Even if one doesn't have diabetes-the nutritional information makes it easy to use in any eating plan for life! Great for Weight Watchers. Learned a lot of hints, and the best is that I had some questions and I contacted her and SHE CALLED ME BACK!!! Wow-that is someone who is proud of the product.

worth every penny
As a young (50) diabetic who loves to cook, I find this book invaluable. Vegetables never tasted so good. The recipes are interesting & modern & the nutrition information is very clear & helpful. These recipes are truly light but delicious & enjoyed by my non-diabetic family. Unlike recipes from other cookbooks that are only good when eaten immediately, these work well for Shabbos.
I really liked the Enlighted Kosher cookbook. I also bought it for the
low-carb, no-sugar recipes. I was not disappointed. I have only made about 5
recipes from it but all have been good. The pumpkin soup was great and I used
canned pumpkin instead of fresh to make it easier. I also mad an almond fish
recipe and a mock noodle kugle. She also has good tips you can transfer to
lower the calories/carbs in your regular recipes. So far it is a hit even with
the non-dieters in our family.

I have had the Enlightened Kosher Cooking Book for about 7 weeks now and I feel it is well worth the money. The Appendix in the back and the different explanations charts etc, in front are very informative. Each recipe has a nutrition Facts chart beside it, many attractive, colourful pictures--etc.
All recipes I have tried have been delicious. I don't think you would be disappointed if you decided to add it to your Cookbook Library.
I recommended it already to quite a few friends, even non diabetics and they loved it!

I got this cookbook as a gift, and I must say, it's one of my favorites. The photographs are FABULOUS and the recipes presented very clearly. The ideas are original and really helped to enhance my family's shabbos and yom tov meals. I highly recommend this cookbook to anyone who wants to cook healthier yet absolutely delicious food.
